Before moving to Florida this year, I was part of playgroup called The Joy Troupe in the Washington D.C. Metro area. For the past several years, the Moms within Joy Troupe create a cookbook that is sold locally and on Amazon.com. Last year’s cookbook was called Tummy Full of Joy: The Busy Mama’s Guide to Quick Kitchen Fixes and it featured my submitted pictures, advertisement for my Washington D.C. Examiner column, and recipe for Shrimp Scampi.
I have always been a fan of seafood–probably because my mother ate frequent amounts of lobster while pregnant with me–which would also attribute to me weighing 11 lbs. when I was born! 🙂 What I like about this recipe is that its a good base recipe for Shrimp Scampi. It can be customized to taste and hot white rice can be substituted instead of linguine.
Ingredients
1 Envelope Good Seasons Garlic & Herb Dressing Mix
1/4 Cup Lemon Juice
1/4 Cup Olive Oil, Divided
1/4 Cup Water
2 Tbsp. Chopped Fresh Parsley
1 Tsp. Minced Garlic
1/8 Tsp. Pepper
1 Small Onion, Chopped
1 – 1 1/2 lb. Medium Shrimp, Cleaned
1 Box Linguine Pasta
Directions
1. Cook linguine pasta as directed on box.
2. While pasta is cooking, mix dressing mix, lemon juice, water, 2 Tbsp. the oil, parsley, garlic, and pepper until well blended. Set aside.
3. Heat remaining 2 Tbsp. of oil in large skillet on medium heat. Add onion; cook and stir until tender but not browned.
4. Add shrimp; cook 3 minutes or until shrimp turns pink, stirring occasionally. Stir in dressing mixture.
5. Bring to a boil on medium heat and boil for 1 minute. Mix with linguine and serve.

Oh yeah, shrimp scampi. It’s always so expensive in restaurants but this recipe is easy to follow at home. Thanks for sharing – I’m looking forward to more recipes for busy mamas.
