After Thanksgiving, there is usually an abundance of food in the refrigerator. Everything from leftover turkey to leftover pumpkin pies, many are eating Thanksgiving leftovers for a few days after Thanksgiving Day. Coming up with creative and unique recipes to that feature all of the Thanksgiving leftovers is a fun part of the post-Thanksgiving days. One after Thanksgiving recipe for leftover sweet potato pie is sweet potato cake. Its basically using the already made for Thanksgiving sweet potato pie into a great tasting moist cake (or rolls) that can be used for a breakfast, as a side dish for dinner, or dessert.
1 3/4 cups white sugar
3/4 cup vegetable oil
3 eggs
1 teaspoon vanilla extract
2 cups cooked, mashed sweet potatoes or sweet potato pie
2 cups all-purpose flour
3 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup beer
Directions
1.Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking dish.
2.Stir together the sugar and vegetable oil in a large bowl until smooth. Beat in the eggs one at a time, then stir in the vanilla and sweet potatoes. Combine the flour, baking powder, baking soda, salt and cinnamon in a separate bowl; stir into the batter 1 cup at a time, alternating with the beer just until everything comes together. Spread the batter evenly in the prepared pan.
3.Bake for 35 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. Cool completely before frosting (optional) or serving.

Okay I never thought of making sweet potato cake. It makes sense like banana cake. I might have to try this because I always make baked sweet potatoes but nothing else with them.

What a great recipe! I was at my girlfriend’s apt. yesterday and she was trying to force feed us her leftover pumpkin pie (of course we had to oblige and eat some LOL) but even with that she still had a ton more left! I will tell her about your Sweet Potato Cake recipe. It looks delish and I love how it can be frozen and saved for Christmas!

Hey @OfeliaNJ: I’m not a huge fan of adding beer to recipes either but this is for the flavor and consistency. It can be taken out…just might not have the same color or texture. Try it! 🙂
