With Mexican cuisine being part of the Cinco de Mayo traditions, Casa Mexicana, is helping families create a fun and easy Cinco de Mayo! Casa Mexicana features all-natural ingredients, no additives, and no MSG. Their tagline is “Authentic Mexican Made Easy” which is very true with their easy to prepare seasoning mixes.

Chicken Chipotle Tacos (Tinga) – This traditional dish from Puebla, where it is locally known as “tinga”, is spicy and infused with chipotle’s smoky flavor.
Chicken Fajitas – A typical dish originating in Northern Mexico served on a sizzling hot metal plate. Ideal for the busy family, chicken fajitas can be made very quickly.
Fish Tacos – This mix re-creates the traditional and delicious recipe of fish tacos from Acapulco, “pescado a la talla”, with hints of smoky chipotle chilies, paprika, coriander and garlic.
- MENU: Pick a dish: Beef Tacos (Barbacoa) , Chicken Chipotle Tacos (Tinga) – may be a bit spicy for young kids – Chicken Fajitas or Fish Tacos .
- MIX: Follow the simple and all-natural recipe of the Casa Mexicana seasoning mix. Accompany with rice, beans and tortillas.
- MOOD: Make it fun by decorating with a Mexican theme and playing typical games, such as piñata or lotería (similar to Bingo).
- MARGARITAS: Serve traditional lime margaritas with and or without tequila.
- MUSIC: Play Mariachi music or other Latin music.
3/4 cup white sugar
1 1/2 ripe avocados, peeled and pitted
2 (3 ounce) packages cream cheese, softened
1/2 cup fresh lime juice
1 (8 inch) prepared graham cracker crust
Directions
- Heat the cream in a small saucepan until small bubbles appear around edges. Remove from heat and stir sugar into the cream until it dissolves. Transfer to a medium bowl, and allow to cool.
- Combine the avocado and cream cheese in a food processor and blend until smooth. Add the lime juice and process until smooth, then whisk into the cooled cream mixture.
- Fill an ice cream maker with the mixture, and freeze according to the manufacturer’s instructions.
- Spoon into the prepared pie crust. Smooth surface with a spatula. Freeze at least 2 hours in freezer before serving.
