My daughters have just turned three years old and the way I surprised them this morning was by making what I call “Berry Pink Pancakes.”
I used my favorite pancake recipe from allrecipes.com and added a few drops of red food coloring and raspberry/strawberry puree for extra color, taste and nutritional benefits. J (Tip: Run your puree through a mesh strainer before adding to the batter this way you catch any seeds in the puree and it stays seedless.)
What I love about this recipe is that it tastes so much better than the boxed version and it doesn’t take more than 15 minutes to make the batter. It’s really quick and so worth it!
Ingredients
1 1/2 cups all-purpose flour
Directions
- In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

You can customize this to fit your mood and switch up the colors. There is gel food coloring which are more pigmented. You can make green pancakes for a Dr. Seuss theme breakfast or blue blueberry pancakes for a boy.
JFYI: A neat trick that I learned online is to preheat your oven to 175 degrees and once your pancakes are made you put them in an oven safe tray in your oven. This way your pancakes stay warm until you’re ready to serve breakfast!

I’m not a huge breakfast person but when I do want to make breakfast special for myself or loved ones I make a great chocolate milk/cafe/cinnamon/whip cream hot drink. I also love hash browns, eggs and turkey bacon.
My stomach is now growling.
