As a military wife and mother of two sets of twins its important for me to provide them with healthy and balanced meals. I am always eager to try new dishes and was pleased when I found this homemade chicken nuggets recipe. This recipe is a healthy alternative to the chicken nuggets children love from fast food restaurants.
Ingredients
• 3 skinless, boneless chicken breasts
• 1 cup Italian seasoned bread crumbs
• 1/2 cup grated Parmesan cheese
• 1 teaspoon salt
• 1 teaspoon dried thyme
• 1 tablespoon dried basil (I didn’t use basil, but I did add a dash of oregano.)
• 1/2 cup butter, melted (I used 1 egg instead.)
Directions
1. Preheat oven to 400 degrees F (200 degrees C).
2. Cut chicken breasts into 1 1/2-inch sized pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter (or egg) in a bowl or dish for dipping.
3. Dip chicken pieces into the melted butter (or egg) first then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer and bake in the preheated oven for 20 minutes.
*NOTE* You can also use this recipe to make Chicken tenders if your child prefers those to nuggets. To make chicken tenders instead cut your chicken breast into long tender sized strips.
My daughters and I love these chicken nuggets. They are quick to prepare and they do not take a long time to cook. I always make enough to have some left over to freeze and they defrost a lot faster than whole chicken breasts. If your children love chicken nuggets then they will love these too!
