Prepare cupcakes as per box’s directions. Allow to cool completely before starting any decorating.
Once the cupcakes are cool, you can start preparing your buttercream. In a stand mixer, start mixing butter and about 5 cups of your powdered sugar.
Add vanilla and 4 tbsp of milk and continue mixing on medium-high speed. Add 2 more cups of sugar and mix more.
In small increments, add milk and/or sugar only if needed. Once you reach the desired consistency (your buttercream should be thick and form semi-stiff peaks), divide into two bowls.
Add 4 drops of your gel food coloring into one of the bowls of buttercream and mix. Once your buttercream is completely colored, add it into your bowl of white buttercream and fold (you’ll want to blend your colors but not combine them. This will help achieve a marbled look).
With the help of a frosting tip + bag, frost each of your cupcakes.
Line a baking sheet with wax paper. Melt each of your candy melts in the microwave (separately), with a teaspoon of coconut oil in each bowl.
Dip a pretzel stick in one candy melt color then dip cover with the sugar sprinkles of the same shade (you’ll want both green and red lightsabers). Place carefully on lined baking sheet and chill in the refrigerator for about 30 minutes or until candy is set.
Place one of each color on your cupcakes. May the force be with you! (But which side will you take?)
