- Coloque la yuca y el ajo en una olla con agua hasta que tape la yuca. Lleve a ebullición a fuego alto. Baje el fuego a medio y cuando la yuca comience a ablandarse, agregue sal al gusto. Cocine hasta que la yuca esté bien suave. Alrededor de 20 – 30 minutos dependiendo si es congelada o fresca.
- Escurre y reserve una taza del agua de la cocción. Pase la yuca y el ajo por el prensa papas o aplástalos con un tenedor. Vuelva a poner la yuca en la olla, agregue 1/2 taza del agua que has reservado, ¾ taza de la leche y la mantequilla, revolviendo bien a fuego muy suave. Añada sal y pimienta gusto. Finalmente incorpore el queso, revolviendo con cuchara de madera hasta que esté homogéneo. Pruebe el puré y asegure que la sazón está a su gusto. Si fuera necesario, puede agregar un poco más del agua en que cocinaste la yuca o leche.
- Sirva el puré rociado con las hojitas de tomillo o tope con queso parmesano y hornee por 20 minutos a 350 y después decore con el tomillo.
